Chinese Recipe : Deep-Fried Eggplant

Ingredients:
- 300g eggplant
- 100g crispy-batter flour
- 20g basil
Seasonings:
- A little white pepper and salt
Directions:
- Rinse eggplant and cut into slices. Trim basil and rinse.
- Mix crispy-batter flour with water. Dip eggplant into the paste.
- Heat oil and deep fry eggplant. Blanch basil in hot oil and garnish on top of eggplant.
