Chinese Recipe : Deep-fried Mashed Potatoes

This is a vegetarian dish.
Serves 4:
Ingredients:
- 2/3 lb potatoes, boiled and peeled
- 1 carrot, finely chopped
- 1 tsp salt
- A pinch of MSG (optional)
- 4 slices of day-old bread, cut into circles, ½ inch thick by 2-inch diameter
Mixture A:
- 1 egg white
- 1 tsp cornstarch
- Black sesame seeds
- 1 tbsp parsley, minced
- Oil for deep-frying
Directions:
- Mash the potatoes, while still hot, and combine with the carrots, salt, MSG and Mixture A.
- Cover the rounds of bread with the potato mixture. Sprinkle with the parsley and black sesame seeds.
- Heat the oil, and deep-fry the bread with the potato mixture face down. Fry until browned.
