Chinese Recipe : Long Beans with Minced Meat

This is a Szechuan recipe
Ingredients:
A, mixed in a bowl:
- 2 tsp fine sugar
- ½ tsp MSG
- ¼ tsp pepper
- 1 tsp oyster sauce
- ½ tsp sesame oil
- 1 tsp sago flour
- 4 fl oz. water
- 6 fl oz. oil
- 8 oz long beans, cut into 2 inch lengths
- 2 tbsp lard or oil
- 3 cloves garlic, chopped coarsely
- 1 ½ tbsp spicy soy bean paste
- 4 oz minced pork
- 2 oz chopped prawn meat
Directions:
- Heat iron wok. When very hot, add oil, and fry long beans till tender. Sprinkle a little water to avoid burning. Remove and drain.
- Heat oil and fry garlic till very lightly browned. Add spicy soy bean paste, pork and prawns, and stir fry till pork changes color. Add A, then fried long beans. Continue cooking over low heat for 1 to 2 minutes. Remove and serve immediately.
Spicy Soy Bean Paste
- 4 oz preserved soy beans (brown)
- 2 tbsp plum paste
- 4 tbsp hot chili sauce
- 2 tsp sesame oil
Direction:
- Combine all ingredients in a bowl and blend well.
