Chinese Recipe - Sliced Lotus Root
|

|
Ingredients:
- 1 lb lotus root, peeled and sliced
- 2 ½ tbsp vinegar
- 2 ½ tbsp soy sauce
- 1 ½ tbsp sugar
- 1 tbsp sesame oil
- 3 chopped red peppers or a few drops Tabasco
- 2 tbsp oil
Directions:
- Peel and slice lotus root. Soak slices in water for 10 minutes or more to remove iron.
- Dip slices in boiling water and remove to cold water again.
- Heat 2 tbsp oil and fry red peppers until they turn dark in color. Remove peppers and use oil only.
- Mix red pepper oil with all other seasonings and add lotus root slices.
- Allow lotus root to stand for a while in seasoning mixture before serving. Serve cold in seasoning mixture.
