Chinese Recipe - Sliced Lotus Root

Ingredients:

  • 1 lb lotus root, peeled and sliced
  • 2 ½ tbsp vinegar
  • 2 ½ tbsp soy sauce
  • 1 ½ tbsp sugar
  • 1 tbsp sesame oil
  • 3 chopped red peppers or a few drops Tabasco
  • 2 tbsp oil

Directions:

  1. Peel and slice lotus root. Soak slices in water for 10 minutes or more to remove iron.
  2. Dip slices in boiling water and remove to cold water again.
  3. Heat 2 tbsp oil and fry red peppers until they turn dark in color. Remove peppers and use oil only.
  4. Mix red pepper oil with all other seasonings and add lotus root slices.
  5. Allow lotus root to stand for a while in seasoning mixture before serving. Serve cold in seasoning mixture.
