Chinese Recipe : Szechuan String Beans

Serves 4 to 6

Ingredients:

  • 1 ¼ lbs string beans
  • ¼ cup oil
  • 3 ½ oz minced meat
  • 1 ¾ oz dried prawns, soaked and chopped
  • 1 ¾ oz pickled Szechuan mustard, chopped finely

Seasoning:

  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 1 tsp sugar
  • 1 tbsp chopped garlic

Directions:

  1. Remove the ends of the string beans.
  2. Place string beans in wok and add oil. Cover and allow to cook until steam appears. Arrange beans neatly on a plate.
  3. To the remaining stock in the wok, add the rest of the ingredients and seasoning. Cook until sauce thickens.
  4. Pour on cooked beans. Serve hot.
