Chinese Recipe : Vegetarian Squid

This is a vegetarian dish.
Ingredients:
A:

1 ½ cup carrot juice

1 cup water
-
15 g sodium carbonate powder

35g bean jelly flour
-
1 metal tray (approx 35 x 25 x 5 cm)

1 pack of toothpicks
-
2 tbsp white vinegar
- ½ tbsp salt
Directions:
- Mix A thoroughly and add the bean flour gradually. Stir in one direction until it becomes like a paste. Pour into the container and smooth over the surface. Let stand for 2 hours.
- Cut into 6cm squares and boil in water for 30 minutes. Remove and let cool.
- Cut each piece horizontally into 0.5cm thick slices. Score the surface of each slice lengthwise and crosswise. Make a roll with each slice and use a toothpick to hold it together.
- Put in hot water, add vinegar and salt, and boil for 30 minutes.
- Soak in cold water for 24 hours; remove and take out the toothpicks.
