
Lentils are an excellent source of folic acid and potassium, and a good source of iron and phosphorus. They are also rich in vitamin A, B and C. Those white root, stem leaf, flowers and seeds all have medicinal use in Chinese medicine. They are good at regulating the digestive system, stopping diarrhea, supplementing the spleen and stomach, expelling the dampness heat. Babies suffering from indigestion or coldness in the digestive system tend to give feces in a slightly green color. But young babies are not old enough for medication yet. Mix ground lentils with ground white pepper, curry powder and flour. Add a little warm water and mix into paste. Apply the paste around the belly button of the baby and wrap a piece of cloth on top. Green feces should stop the next day. When the sense of taste is impaired and feeling worn out in the summer, you can make a sweet soup with white lentils and fresh lotus leaf. Brown lentils can be cooked in 15 to 20 minutes in a pressure cooker, and orange lentils take as little as 5 minutes.
