Lentils and its Medicinal Properties

Lentils are an excellent source of folic acid and potassium, and a good source of iron and phosphorus. They are also rich in vitamin A, B and C. Those white root, stem leaf, flowers and seeds all have medicinal use in Chinese medicine. They are good at regulating the digestive system, stopping diarrhea, supplementing the spleen and stomach, expelling the dampness heat. Babies suffering from indigestion or coldness in the digestive system tend to give feces in a slightly green color. But young babies are not old enough for medication yet. Mix ground lentils with ground white pepper, curry powder and flour. Add a little warm water and mix into paste. Apply the paste around the belly button of the baby and wrap a piece of cloth on top. This drives away dampness and stimulate appetite.

Lentils do not have to be soaked, but they should be washed carefully because they often contain small stones. Lentils that have been plunged into boiling water are easier to digest. Lentils will turn to mush if they are cooked for too long. Brown lentils take about 60 minutes to cook, while orange lentils take only about 20 to 30 minutes. When cooking lentils in a pressure cooker, add a little oil to prevent the scum that forms on top of the lentils from blocking the safety valve. Brown lentils can be cooked in 15 to 20 minutes in a pressure cooker, and orange lentils take as little as 5 minutes..
