Sweet potatoes have two main varieties which differ in color: purple and yellow. It can be poached, steamed, or roasted. There is a lot of starch, carbohydrates, fiber and essential protein in sweet potatoes. Especially in times of famine, sweet potatoes are always the main source of food that replaces rice or noodles in meals. People who suffer constipation should eat sweet potatoes frequently because the fiber in it stimulates peristalsis of the intestine and hence facilitates defecation.

Sweet potato is believed to be supplementing and warming the stomach in Chinese medicine. However, patients suffering from indigestion or Heat-dampness should not eat too much sweet potatoes because it can cause swelling of stomach and abdominal pain. Sweet potato is also widely used as raw material in pharmaceutical business for making glucose, alcohol and acetic acid. Sweet potato sweet soup is a tasty dessert. Sliced sweet potato dusted with flour can be deep fried to make a crispy snack. Sweet potatoes can be steamed, sliced and sun-dried into a dry food for prolonged storage. Sweet potatoes can be roasted with the peel on. It is a local street stall favorite in winter.

When buying sweet potatoes, choose those that are firm, without soft spots, cracks, or bruises. Avoid refrigerated sweet potatoes, as their taste is altered by the cold. It will keep from 7 to 10 days id stored in a cool, dark and well-ventilated place. Although the sweet potato should not be stored in the refrigerator when raw, once cooked, it will keep for about a week in the refrigerator; it can also be frozen after being cooked. Immerse fully the sweet potato as soon as it is cut in cold water until you are ready to use it or cook to prevent the flesh from darkening from oxidization.
