Whetstone - A very hard, dense-grained rectangular block used to sharpen dull knives. One side often will have a finer texture than the other to put a sharper finished edge on the blade. The block is lubricated with oil or water before drawing the knife blade across at a 20-degree angle several times. This should be done periodically to keep knives and cleavers very sharp. Whetstones are also known as oilstones or sharpening stones.
Whip - (v.) To beat very rapidly with an eggbeater, whisk, mixer or fork to introduce very tiny air bubbles into a mixture, thereby changing its consistency. (n.) Another name for a whisk.
Wok - A bowl-shaped metal cooking pan; used for all kinds of cooking,
but especially for stir-frying foods at very high heat by the Chinese. Learn more about wok.
Zest - The thing outer skin of oranges and lemons. This is the only part which should be used for flavoring as the white pith underneath us so very bitter.
