International Recipe : Caesar Salad with Gorgonzola Cheese Dressing

4 servings

Ingredients:

Bread crisps

  • 8 thick slices white bread (e.g. baguette)
  • 2 tbsp melted butter
  • 2 tbsp olive oil

Dressing:

  • 150g Gorgonzola cheese
  • 2 tbsp UHT cream
  • 1 tbsp balsamic vinegar
  • 5 tbsp extra virgin olive oil
  • 1 tbsp chopped chives
  • 300g Romaine lettuce
  • 30g roasted pine nuts (or walnuts)
  • Freshly ground peppercorns

Directions:

  1. To prepare bread crisps, toast the bread slices in a pan, drizzling the melted butter and olive oil over. Fry until crisp, dry and golden. Cool and store in an air-tight container until required.
  2. To prepare dressing, heat Gorgonzola in a pan and stir until melted. Add the cream and balsamic vinegar. Stir to mix well. Remove from heat and cool before mixing in the olive oil and chives.
  3. To serve, arrange the Romaine and bread crisps on a plate, drizzle the dressing over and sprinkle with pine nuts. Season with freshly ground peppercorns.
