International Recipe : Caesar Salad with Wasabi Dressing

  • 4 thick slices white bread (e.g. baguette)
  • 2 tbsp melted butter
  • 2 tbsp olive oil


  • 2 egg yolks
  • 2 cloves garlic, chopped
  • 3 (canned) anchovy fillets
  • 5 drops Worcestershire sauce
  • 1 tbsp lemon juice
  • 2 tbsp extra virgin olive oil
  • Wasabi powder to taste
  • Salt and freshly ground pepper to taste
  • 100g bacon slices (beef or pork)
  • 300g Romaine lettuce
  • 100g Parmesan cheese, shaved or grated


  1. To prepare croutons, cut the bread into cubes and toast in a pan, drizzling the melted butter and olive oil over. Fry until crisp, dry and golden. Cool and store in an air-tight container until required.
  2. To prepare dressing, mix all the ingredients together in a blender – or use a hand whisk – seasoning to taste with the wasabi powder, salt and pepper.
  3. To serve, grill the bacon in the oven or pan-fry until crisp. Arrange the lettuce, bacon, croutons and cheese on a plate.
  4. Drizzle the dressing over these.
