International Recipe : Chargrilled Chicken with Roasted Garlic and Mushroom Sauce

Ingredients:

  • 600g whole chicken, halved

Seasoning:

  • Paprika to taste
  • Oyster sauce to taste
  • Salt and pepper to taste
  • 30g cauliflower
  • 30g broccoli
  • 3 young corns
  • 5 baby asparagus
  • 10g unsalted butter

Cooking oil:

  • 50g oil
  • 50g whole garlic pips, crushed
  • 50g fresh shiitake mushrooms, sliced
  • 1 potato, boiled

Directions:

  1. Season chicken with paprika, oyster sauce, salt and pepper before roasting in preheated oven at 200 degrees C for about 30 minutes or until golden brown. Set aside. Reserve pan juice for later use.
  2. Blanch each type of vegetables separately in salted water before plunging them into ice water. Saute with butter and season to taste with salt and pepper.
  3. Peel and slice the boiled potato. Pan fry in a heavy-bottomed pan with some oil. Season to taste with salt and pepper.
  4. To serve, place chicken, vegetable and potato on a dinner plate nad pour mushroom sauce over chicken.
