International Recipe : Cream of Pumpkin Soup

Serves 6 to 8


  • 1 kg pumpkin, peeled and diced
  • 2 medium onions, diced
  • 4 tbsp butter
  • 1 cup milk
  • 4 cups water
  • 4 tbsp melted butter
  • 3 tbsp flour
  • ½ cup cream
  • Salt and pepper to taste
  • 1 tsp soy sauce


  1. Melt 4 tbsp butter in a large saucepan.
  2. Add pumpkin and onions and sauté for 2 minutes.
  3. Sprinkle salt and pepper into the pan and add water.
  4. Cover and let simmer for an hour or until vegetables are tender.
  5. Remove pan from heat and let cool.
  6. Pour into blender and blend until very smooth.
  7. Mix melted butter, flour and milk to make a béchamel sauce.
  8. Add this sauce to pumpkin mixture.
  9. Return pan to heat.
  10. While serving, spoon 1 tsp of cream in soup bowls and pour hot soup.
  11. Sprinkle pepper and soy sauce on top.
