International Recipe : Healthy Pita Pocket Sandwich

Serve 2-3

Ingredients:

  • 4 wedges seedless watermelon
  • 1 chicken breast, cooked and diced
  • 1 tbsp chopped coriander
  • 2 tbsp plain yogurt
  • ¼ tsp garlic salt
  • Pinch of cayenne pepper, or chilli
  • 2 whole pita bread, halved
  • 4 large lettuce leaves

Directions:

  1. Place sliced watermelon on paper towels to remove excess liquid.
  2. Mix chicken, coriander, yogurt, garlic salt and cayenne.
  3. Fill pita bread half with roughly ¼ cup of the chicken mixture.
  4. Arrange watermelon and lettuce in the pita bread.
