International Recipe : Honey Banana Bread

Ingredients:

  • 500g high protein flour, sifted
  • 10g milk powder, sifted
  • 6g bread improver, sifted
  • ¼ tsp bicarbonate of soda, sifted
  • 1 tsp salt
  • 11 g instant active dry yeast
  • 600g mashed banana
  • 3 Grade A eggs, lightly beaten
  • 75g honey
  • 100g butter, chopped and softened
  • 250g chopped banana, extra

Directions:

  1. Mix sifted ingredients and salt in electric mixer with dough hook on low speed for a minute. Mix in yeast.
  2. Combine banana, eggs and honey and add to flour. Mix on low speed for 1 minute, then medium speed for 8 minutes.
  3. Gradually add butter and mix on medium speed for 5 minutes. The dough should be sticky and wet. Cover and leave for 30 minutes.
  4. Mix in extra bananas with a spatula.
  5. Spoon 60g portions of dough into small baking tins. Place on oven tray. Let dough prove till it rises to the rim of tin.
  6. Bake in a preheated oven at 200 degrees C for 10 to 12 minutes.
