International Recipe : Simple Pumpkin Pie

16 servings

Ingredients:

  • 2 eggs, separated
  • 400g grated pumpkin
  • 200ml evaporated milk
  • 150g sugar
  • 1 tsp ground cinnamon
  • ½ tsp ground ginger
  • ¼ tsp ground nutmeg
  • ¼ tsp ground cloves
  • ¼ tsp salt

Directions:

  1. Prepare unbaked pie crust in a 25cm (10”) pie pan. Preheat oven to 190 degrees C.
  2. In a small bowl with mixer at high speed, beat egg whites until soft peaks form. Set aside.
  3. In a large bowl, with mixer at low speed, beat together the egg yolks, pumpkin and the rest of the ingredients until well-blended.
  4. Gently fold beaten egg whites into the pumpkin mixture. To avoid spilling pumpkin mixture, place pie pan on pulled-out oven rack and pour filling into the crust. Push rack back.
  5. Bake for 45 minutes until filling is set and knife inserted 3cm from edge comes out clean; refrigerate. Serve with whipped cream.
