1 meaty chicken carcass
0.75kg / 1 ½ lb pork spareribs
0.5kg / 1 lb ham, bacon or beef bones
2 liters / 3 ½ pints water
2 x 5ml spoon / 2 tsps salt
2 x 5ml spoon/ 2 tsps dried shrimps (optional)
1. Put all the ingredients into a large heavy pan or flameproof pot. Bring to the boil, cover and simmer gently for 1 3/4 hours, skimming frequently. Leave to cool. When cold, skim any fat and serve as a soup or use as required.
