Philippines Recipe : Apretada Chicken

Ingredients:
- 1 kg chicken, cut in pieces
- Salt and black pepper to taste
- Flour for coating
- Oil for frying
- 4 cloves, pounded
A: Finely chopped
- 1 medium onion
- 1 medium tomato
- 125g tomato sauce
- 500ml water
- 1 small bay leaf
- 2 tsp dried oregano
- 1 green pepper, diced 1 cm
- 80g peas
- 1 tbsp cornflour mixed with 3 tbsp cold water
Directions:
- Dust chicken pieces in flour, salt and black pepper. Brown quickly in hot oil till half-cooked. Remove.
- Heat oil. Saute garlic, onions, tomatoes and tomato sauce in a separate pot till fragrant. Add water and let it boil.
- Add browned chicken, bay lead, oregano and green pepper. Simmer for 30 minutes or till the chicken is tender.
- Add salt and black pepper to taste. To thicken gravy, add cornflour mixture.
- Add peas. Cook for another 3 minutes.
