Indian Recipe : Chapati

Serves 4 to 6

Ingredients:

  • 3 cups fine wholemeal flour (atta flour)
  • 1 ½ tsp salt
  • 1 tbsp ghee or oil (optional)
  • 1 cup lukewarm water

Directions:

  1. Mix 2 ½ cups flour, salt and rub in ghee or oil.
  2. Add water all at once to mix into a firm dough.
  3. Knead dough for at least 10 minutes (the more it's kneaded, the lighter the bread will be)
  4. Form a dough into a ball, cover with a plastic wrap and stand for at least 1 hour. (if left overnight the chapattis will be light and tender)
  5. Shape dough into balls about the size of a ping pong ball. Roll out each portion into round flat pieces on a lightly floured board (use the remaining ½ cup flour)
  6. heat a flat-bottomed pan without oil and cook the chapattis on one side, pressing lightly with a folded tea towel.
  7. Flip it over and cook for another minute or so. Serve hot with curries.
