Indian Recipe : Crunchy Okra

This is a vegetarian dish

Serves 4-6
Preparation time: 40 minutes
Cooking time: 30 minutes

Ingredients:

  • 500g Okra
  • Salt to taste
  • 1 tsp red chili powder
  • 1 tsp garam masala
  • ½ tsp dry mango powder
  • ½ tsp chaat masala
  • 3 tbsp gramflour (besan)
  • Oil for frying
  • 1 ½ tsp ginger, julienned
  • 2 green chilies, sliced (optional)

Directions:

  1. Snip off both ends of each okra, slice length-wise into four slices.
  2. Spread all sliced okra on a flat dish and sprinkle evenly with salt, chili powder, garam masala, mango powder and chaat masala. Mix gently to coat okra evenly.
  3. Sprinkle gram flour oven the okra and mix in so they are coated evenly, preferably without adding any water.
  4. Divide the okra into two portions.
  5. Heat oil in a wok or pan till it is smoking.
  6. Fry one portion coated okra slices, separating each lightly with a fork. Do not allow slices to stick to each other.
  7. Remove from oil when both sides are crispy and brown in color.
  8. Similarly, fry the other portion.
  9. Garnish with julienned ginger and green chilies.
  10. Serve hot, accompanied by Chappatis.
