Indian Recipe : Firni

Ingredients:

  • 1 litre milk
  • ½ cup uncooked rice
  • 1 1/3 cups sugar
  • 4 cardamoms
  • 10 almonds
  • 15 pistachios
  • A few drops of keora essence

Directions:

  1. Soak rice in water for 2 hours. Drain water and dry thoroughly. Grind rice until it is finely powdered.
  2. Bring milk to boil on high flame. Stir continuously to avoid cream forming on top.
  3. Reduce heat and add powdered rice and sugar, stirring continuously for 15 minutes till thickened. Remove from heat.
  4. Add keora essence and cardamom powder after cooking to room temperature.
  5. Pour into a bowl and sprinkle grated almonds and pistachios on top.
  6. Cover with silver foil and set under refrigeration for at least two hours before serving.
