Indian Recipe : Sankhe Pakori

This is a North Indian recipe

  • 1 cup Urad dal (black gram - split)
  • I cup Chana dal (bengal gram - split)
  • 1 cup Moong dal (green gram - split)
  • 1 tsp asafetida
  • 1 tbsp cumin seeds
  • 1 tsp black peppercorns
  • 1 tbsp coriander seeds
  • Salt to taste
  • Oil for deep frying
  • 1 tsp red chili powder
  • 1 tsp Amchur (dry mango powder) - salt mix

Directions:

  1. Soak dals separately in water for 3 to 4 hours. Drain and grind to form a coarse paste. Remove and keep aside.
  2. Grind cumin seeds, asafetida, pepper corns and coriander seeds to form a powder. Mix powder with ground paste of dals and add salt.
  3. Form 3 to 4 inches rounds or ovals and deep fry them ( 3 to 4 together till they are light pink in color)
  4. Remove from oil and cut them length wise. Now deep fry these to golden brown.
  5. Sprinkled red chili powder and amchur-salt mix over them and sever.
