Indian Recipe : Spinach Potato Delight

Serves 4-5
Preparation time: 25 minutes
Cooking time: 25 minutes


  • 1kg spinach, finely chopped
  • 1 ¼ cups potatoes, boiled, cubed
  • 10 cups water
  • Salt to taste
  • 2 tsp maize flour
  • 2 tbsp clarified butter
  • 5 tsp onions, chopped
  • 5 tsp ginger, chopped fine
  • 3 green chilies, chopped
  • 2 tsp cream


  1. Boil spinach in salted water for 10 minutes, drain excess water and puree the spinach.
  2. Reheat the spinach puree, add potato and mix well.
  3. Add maize flour slowly and cook for 10 minutes.
  4. In a separate pan, heat the clarified butter and brown the onions with half the ginger. Add green chilies and sauté for 1 minute.
  5. Pour this over the potato spinach mixture, stir well and bring to a boil.
  6. Serve hot, garnished with julienned ginger and cream, accompanied by Chappatis.
