Indian Recipe : Tomato Delight

Serves 4-5
Preparation time: 20 minutes
Cooking time: 40 minutes

Ingredients:

  • 1kg tomatoes (quarters)
  • ½ cup oil
  • 1 ½ tsp ginger paste
  • 1 tsp red chili powder
  • ½ tsp coriander powder
  • 1 tsp garlic paste
  • 2 tsp cumin powder
  • Salt to taste
  • ½ tsp onions seeds
  • ½ tsp fenugreek seeds
  • ½ tsp mustard seeds
  • 3 whole red chilies
  • 20 cherry tomatoes, blanched

Directions:

  1. Heat half the oil in a thick bottom wok.
  2. Add ginger and garlic paste. Stir fry for a minute.
  3. Add red chili powder, coriander powder, cumin powder and salt to taste. Add tomatoes and stir fry till tomatoes are cooked.
  4. Strain and keep aside.
  5. Heat remaining oil. Add onion seed, fenugreek seeds, mustard seeds and whole red chilies. Let them crackle and add to the strained sauce.
  6. Add cherry tomatoes to the sauce and simmer for about 4 minutes.
  7. Serve immediately, accompanied by steamed rice.
