Chinese Recipe : Chinese Chicken Rice Salad

Serves 6
Ingredients:
- 3 c. cooked rice
- 2 1/2 c. cooked chicken
- 1 (8 oz.) can water chestnuts, drained and sliced thin
- 2 med. carrots, cut into matchsticks
- 1/2 c. walnuts
- 2 tsp. cider vinegar
- 2 tbsp. vegetable oil
- 1 tbsp. soy sauce
- 1 tbsp. honey
- 1 clove garlic, minced
- 1 tsp salt
- 1/2 tsp. ground ginger
- 1/8 tsp. red pepper
Directions:
- Cool rice.
- Combine rice, chicken, water chestnuts, carrots and walnuts.
- Blend vinegar, oil, soy sauce, honey, garlic, salt, ginger and red pepper.
- Mix with rice and chill.
