Chinese Recipe : Fried Shredded Potatoes

Ingredients:
- 4 potatoes
- ½ tsp salt
- Oil for deep frying
Directions:
- Peel potatoes, shred, and soak in water for 10 minutes.
- Drain potatoes on cheesecloth.
- Fry ¼ of potatoes at a time in deep oil until color turns light brown. Stir with chopsticks to prevent potatoes from sticking together. Sprinkle with salt while still hot.
