International Recipe : Cajun Chicken and Cheese Bun

Ingredients:

Filling:

  • 500g chicken breast meat, diced
  • 3 tbsp vegetable oil
  • 3 onions, chopped
  • 1 red pepper, chopped
  • 1 green pepper, chopped
  • 10g cornflour
  • 2 tbsp water
  • Mozzarella, grated
  • Cheddar, grated

Marinade for chicken:

  • 20g Cajun seasoning
  • 2 tsp cornflour
  • 1 tbsp water
  • 1 tsp vegetable oil

Directions:

  1. Mix marinade ingredients well and add to diced chicken. Marinate meat for at least 30 minutes.
  2. Heat oil in a pan to fry the onion and garlic over medium heat until onion is soft. Add the seasoned chicken and fry over high heat until chicken is cooked and lightly browned.
  3. Add peppers and stir-fry for a minute.
  4. Mix cornflour and water and add to the chicken.
  5. When the sauce thickens, remove from heat and leave to cool.
  6. Roll each piece of dough (basic recipe) to a 10cm round.
  7. Push up the dough to make a raised edge.
  8. Place on baking tray. Repeat with remaining portions of dough. Cover; rest for 10 minutes.
  9. Fill the dough with some mozzarella, two heaped tablespoons of filling, and some cheddar. Cover and leave to rise for 35 minutes.
  10. Bake in preheated oven at 200 degrees C for 10 minutes or until browned.
