International Recipe : Carrot Cake

Ingredients:

  • 220g all-purpose flour
  • 300g sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tsp ground cinnamon
  • 220g finely shredded carrot
  • 250ml corn oil
  • 4 eggs

Directions:

  1. Grease and lightly flour a 33x23x5cm (13x9x2”) baking pan or two 23cm (9”) round baking pans.
  2. In a mixer bowl, combine the first six ingredients. Add the next three ingredients, beating with electric mixer until combined. Beat on medium speed for 2 minutes. Turn into pan(s).
  3. Bake in a 165 degrees C oven for 50 to 60 minutes in the rectabgular pan or till done. If using the 23cm pans, bake for 40 minutes or until done. Cool in the pan for 10 minutes before turning out to cool on a wire rack.
  4. Apply the cream cheese frosting on the cake. For the round cake, apply a layer of cream cheese between the two layers as well.
