International Recipe : Greek Salad

Serves 6 to 8

Ingredients:

  • 4 carrots, peeled and chopped finely
  • 2 small turnips, peeled and chopped finely
  • 2 potatoes, peeled and chopped finely
  • 2 sticks celery, chopped finely
  • 4 large tomatoes, blanched, peeled and pureed
  • 1 small leek, washed and shredded
  • 1 cup shredded cabbage
  • 3 cups water
  • 25 g butter
  • 2 cloves garlic
  • 25 gm spaghetti
  • Salt and pepper to taste
  • 1 cup cream cheese

Directions:

  1. Heat butter in a heavy pan.
  2. Add carrots, turnips, potatoes, celery and garlic. Sauté until transparent.
  3. Add water and bring to boil.
  4. Cover and simmer for 15 minutes or until vegetables are tender.
  5. Add tomatoes, cabbage, leeks and spaghetti pieces.
  6. Bring to boil again.
  7. Continue cooking in low flame for 15 minutes.
  8. Sprinkle salt and pepper.
  9. Serve hot in soup bowls garnished with cream cheese.
