International Recipe : Walnut Parfait

Serves 8

Ingredients:

  • 600ml whipping cream
  • 400g walnuts, roughly chopped
  • 3 egg whites, lightly beaten
  • Maple syrup, to taste
  • 35g gelatine, dissolved in 50ml boiling water

Directions:

  1. Whip the cream with an electric mixer until it forms stiff peaks.
  2. Then add chopped walnuts, lightly beaten egg white, and maple syrup. The gelatin is added last.
  3. Fold all the ingredients in so that they are well mixed.
  4. Pour the mixture into a mould. Allow to set in the freezer – overnight is best.
  5. When parfait is set, turn out of the mould and garnish with cream, walnuts, fruits and/or a little maple syrup whipped with cream.
  6. Allow to thaw slightly so that it is served cold, not frozen.
