Chinese Recipe : Shrimp Noodles

This is an Eastern Chinese recipe

Ingredients:

  • 1 tsp cornstarch
  • 1 egg white
  • ¼ lb shelled shrimp
  • ¾ lb fresh egg noodles
  • Salt
  • 3 tbsps lard
  • 2-3 scallions, cut into 1 inch pieces
  • 2 tbsps soy sauce
  • 1 tbsp dry sherry
  • 1 tsp sugar
  • 1 tsp sesame oil

Directions:

  1. Mix the cornstarch with the egg white in a bowl. Add the shrimp and toss to coat well.
  2. Cook the noodles in boiling salted water for about 5 minutes. Drain and rinse under cold running water.
  3. Melt the lard in a pan. Add the scallions and shrimp and stir-fry for 1 minute.
  4. Add the soy sauce, sherry and sugar and stir well. Add the noodles and mix well. Continue cooking for 2 to 3 minutes, then add the sesame seed oil just before serving.
