Chinese Recipe : Ham with Lotus Seeds in Honey Sauce

This is an Eastern Chinese recipe

Ingredients:

  • 1 x 2 inch thick slice of ham (about 2 - 2 ¼ lb)
  • 3 tbsps brown sugar
  • Pinch of ground cinnamon
  • 6 tbsps water
  • 1 2/3 cups lotus seeds or peanuts

Honey sauce:

  • 3 tbsps clear honey
  • 1 ½ tbsps sugar
  • 2 tsps cornstarch
  • 3 tbsps water

Directions:

  1. Place the ham on a heatproof dish. Put into a steamer and steam steadily for 1 hour. Cut the ham into 8 pieces, then reassemble them into the original shape.
  2. Heat the brown sugar, cinnamon and water in a pan until the sugar is dissolved. Add the lotus seeds or peanuts and cook, stirring for 2 minutes.
  3. Spoon the mixture over the ham. Return the dish to the steamer and steam steadily for a further 1 ½ hours.
  4. Place the ingredients for the honey sauce in a saucepan and cook, stirring continuously until thickened. Pour over the lotus seeds. The ham should be tender enough to be broken into small bite-size pieces with chopsticks. Serve hot.
