Chinese Recipe : Spareribs in Sweet and Sour Sauce

This is an Eastern Chinese recipe

Ingredients:

  • ½ tsp salt
  • 1 tbsp dry sherry
  • 1 tsp cornstarch
  • 1 lb pork spareribs, cut into 1 inch squares
  • ¼ cup oil

Sauce:

  • ¼ cup sugar
  • 3 tbsps wine vinegar
  • 2 tbsps soy sauce
  • 1 tsp cornstarch

Directions:

  1. Mix together the salt, sherry and cornstarch in a dish. Add the sparerib pieces, toss to coat with the mixture and leave to marinate for about 30 minutes.
  2. Heat the oil in a pan. Add the spareribs pieces and fry over low heat for about 2 minutes. Take out with a slotted spoon and drain. Increase the heat and when the oil is really hot, return the spareribs to the pan and fry for about 30 seconds until golden. Remove with a slotted spoon and drain on absorbent kitchen paper. Keep hot
  3. There should be enough oil left in the pan to cook the sauce. Mix together the sauce ingredients and add to the pan. When the sauce is bubbling, mix in the spareribs. Stir well until each piece is coated with the sauce. Serve hot.
