Chinese Recipe : Stir Fried Shredded Beef with Ginger

Ingredients:
- 1 lb flank steak, shredded
- 1 tsp salt
- 1 tbsp cornstarch
- 3 ½ tbsps oil
- 12 slices ginger root, shredded
- 2 ½ tbsps soy sauce
- 1 tsp sugar
- 2 tbsps dry sherry or yellow wine
- 2 tsps cornstarch dissolved in 2 ½ tbsps water
- 3 scallions, cut into 1 ½ inches pieces
- Freshly ground black pepper
Directions:
- Sprinkle the steak with the salt, cornstarch and 1 ½ tsps oil. Heat the remaining oil in a pan. Add the steak and ginger and stir-fry over high heat for 2 minutes.
- Stir in the soy sauce, sugar and sherry or wine and the cornstarch mixture. Continue stir-frying for a further 1 minute.
- Sprinkle in the scallions and add the pepper to taste. Stir and turn a few times. Transfer to a serving dish and serve hot.
