Chinese Recipe : Stirfried Beef in Oyster Sauce

This is a famous Cantonese dish
Ingredients:
- 2/3 lb sirloin or top round beef, thinly sliced
- ½ scallion, chopped finely
- 1 inch piece fresh ginger, chopped finely
- 1 tsp baking powder
Mixture A:
- 1 tbsp cornstarch
- 2 tbsp oyster sauce
- 1 tbsp Chinese rice wine or sherry
Directions:
- Dust the beef with the baking powder, and let sit for 1 hour. (Baking powder tenderizes the meat). Then coat the beef with Mixture A, and let sit for another hour.
- Heat the oil, and stir-fry the scallion and ginger. Add the undrained meat, and stir fry quickly over high heat for 2 minutes.
