Chinese Recipe - Lotus Root and Pork Soup

Ingredients:

  • 1 lb lotus root
  • 1 ½ lbs spareribs
  • 6 cups broth (from spareribs)
  • 1 stalk leek, cut into small sections
  • 2 tsp salt
  • ¼ tsp MSG

Directions:

  1. Discard ends of lotus root. Remove skin and cut root in half lengthwise. Then slice thin. Soak in water with a small amount of vinegar to prevent discoloration.
  2. Simmer spareribs for 40 minutes or until tender, using enough water to produce 6 cups broth.
  3. Add lotus root, leek, salt and MSG. Simmer for 20 minutes longer and serve hot.
