There are two main types of Chinese vegetarian cooking: dishes made according to Buddhist principles and dishes that are meatless for reasons of poverty or preference. The former are often restaurant dishes with well-known names, while the latter belongs to the less definable area of domestic cooking. The style of Buddhist cooking developed over the centuries in the temples, where dinner served to benefactors were composed of dishes resembling those served in ordinary restaurants but made according to Buddhist dietary laws.

Gautama Buddha himself taught the importance of the “middle way” avoiding both a life of sensual pleasure and also one of profitless self-mortification. It is fundamental to Buddhist philosophy not to take life; not to harm any living thing in your work; and to avoid distractions from one’s awareness of the body, feelings and mind. One basic tenet of Buddhism is that of reincarnation and there is a belief that animals can be reincarnated as humans and vice versa. So, in common with Buddhists everywhere, Chinese Buddhists are supposed to eat no meat because this is considered to be bad for their karma.

They are also to avoid strong, ‘rank’ flavors, such as onion, leeks, coriander, garlic and chilies, which could distract the body and mind. Buddhist cuisine is not necessarily vegan. Many adherents allow milk and eggs in their diet, but some strict believers do not. Such beliefs may be due to objections about the environment in which the animals producing such products are raised.
In such a meatless diet protein is provided from vegetable sources such as beans
and wheat. Beancurd from soya beans has been made in China for almost two thousand years, and has always been a very important food for people whole diet has perennially been short of protein. Buddhist vegetarian chefs have become extremely creative in imitating meat using gluten, tofu, agar and other plant products. Gluten and tofu are very versatile materials, because they can be manufactured into various consistencies and textures. With the proper seasoning and flavor, they can mimic various kinds of meat closely. Many fermented soy products provide a meaty flavor.
