Chinese Recipe : Chinese Egg Foo Yung

Ingredients:

  • 6 eggs, beaten
  • 1 c. drained bean sprouts
  • Soy sauce to taste
  • 1/2 c. cooked chopped chicken or ham
  • 3 chopped green onions (top & bottom)
  • Oil enough to grease pan

Gravy Mix:

  • 1 c. cream of chicken soup
  • 1/2 can of water
  • Soy sauce to taste
  • Sm. amount of cooked, chopped chicken or other meat

Directions:

  1. Beat eggs - Add bean sprouts, sauce, onions and meat.
  2. Heat frying pan with oil enough to grease pan - drop mixture by spoon, like pancakes, fry until light brown on both sides.
  3. Remove, place on heated plate, keep warm. (Makes approximately 12.)
  4. Heat "gravy mix" until completely heated. Place 3 pancakes on plate, cover with gravy, add soy sauce to taste.
