Chinese Recipe : Preserved Eggs

These Preserved Eggs make a tasty side course for your rice and noodle dishes ! Eat these Century Eggs as an hors d'eouvre also or in the Shanghai style with chilled Tofu ! Try a dish out with these Preserved Eggs and tell me which dish you liked best !

Ingredients:

  • 4 preserved eggs
  • 2 tablespoons vinegar
  • 1 tablespoon chopped ginger

Directions:

  1. Remove the lime and shell from the eggs, being careful not to break them.
  2. Wash in cold water.
  3. Cut each egg into 6 pieces lengthwise.
  4. Arrange on a dish and sprinkle with the vinegar and chopped ginger.
  5. Serve cold.
