Chinese Recipe : Crispy Fish in Batter

Ingredients:

  • Sardine, about 1 lb / 450 g
  • oil for deep-frying
  • Dipping sauce: sweet and sour sauce / ketchup / pepper-salt

(A):

  • 1/2 Tablespoon cooking wine
  • 1/2 teaspoon salt
  • dash of pepper

(B):

  • 3/4 cup water
  • 1/2 Tablespoon sugar
  • 1/2 teaspoon baking soda
  • 1 cup low-gluten flour
  • 1 Tablespoon sesame seeds
  • 1 Tablespoon oil

Directions:

  1. Marinate the fish in (A) for about 15 minutes (if live fish are used, blanch fish 10 seconds before marinating them.)
  2. Mix the ingredients of (B) together to make the batter.
  3. Heat the oil in a wok. Pat the fish dry; coat with batter; deep-fry until golden and crunchy (needs about 4 minutes).
  4. Serve with pepper-salt / ketchup / sweet and sour sauce. It is best to serve HOT.
