Chinese Recipe : Crispy Fish in Batter

Ingredients:
- Sardine, about 1 lb / 450 g
- oil for deep-frying
- Dipping sauce: sweet and sour sauce / ketchup / pepper-salt
(A):
- 1/2 Tablespoon cooking wine
- 1/2 teaspoon salt
- dash of pepper
(B):
- 3/4 cup water
- 1/2 Tablespoon sugar
- 1/2 teaspoon baking soda
- 1 cup low-gluten flour
- 1 Tablespoon sesame seeds
- 1 Tablespoon oil
Directions:
- Marinate the fish in (A) for about 15 minutes (if live fish are used, blanch fish 10 seconds before marinating them.)
- Mix the ingredients of (B) together to make the batter.
- Heat the oil in a wok. Pat the fish dry; coat with batter; deep-fry until golden and crunchy (needs about 4 minutes).
- Serve with pepper-salt / ketchup / sweet and sour sauce. It is best to serve HOT.
