Chinese Recipe : Shark's Fin Omelet

Ingredients:

  • Skinned dried shark’s fin, soak in cold water for an hour and drain
  • Hot chicken stock
  • 3 tbsps. bean sprouts
  • 3 eggs, lightly beaten with a pinch of salt and pepper
  • 1 1/2 tbsp. peanut oil

Directions:

  1. Cover shark’s fin with stock and let simmer for 3 hours. Drain and shred it.
  2. Heat the wok, add oil and wait till heated up.
  3. Add shark’s fin and bean sprouts and gently cook for 1 min.
  4. Pour egg over shark’s fin mixture, toss and turn so that it does not color.
  5. Remove when is has just came together. A good Chinese omelet should be moist but not runny.

Shark finning is threatening the existence of sharks! Million of sharks are killed annually for their fins alone. STOP eating shark's fin if you want the killing to stop.
