Recipe of the day : Deep-Fried Eggplant

Ingredients:

  • 300g eggplant
  • 100g crispy-batter flour
  • 20g basil

Seasonings:

  • A little white pepper and salt

Directions:

  1. Rinse eggplant and cut into slices. Trim basil and rinse.
  2. Mix crispy-batter flour with water. Dip eggplant into the paste.
  3. Heat oil and deep fry eggplant. Blanch basil in hot oil and garnish on top of eggplant.
